Rhubarb Recipes

I was recently gifted a bag full of garden-fresh rhubarb, and was so excited to do some baking with it, when I realized I had no idea what I was going to make! I love Strawberry Rhubarb Pie, and fruit cobbler is always easy to make, I tried a rhubarb cake that was delicious too, but I wanted to take a look around the web and see what else was out there. So, I did some research and found a handful of recipes with rhubarb that caught my eye, some that I had never tried before and some that reminded me of treats my mom would make with the rhubarb she would grow in our backyard.

I was surprised to see a few uses for rhubarb I never would have thought of, so I put together a list of the recipes with rhubarb as a main ingredient that I found and can't wait to try; I'll be testing a few of these out this week while I get some rhubarb baking done.  All of these recipes are dairy-free, egg-free, and most of them are healthy for you, so you can enjoy your rhubarb treats guilt-free.

Rhubarb Chutney with Strawberries and Ginger- Happy Kitchen 
This is one of the first recipes I saw that really caught my eye - I never would have thought to make chutney with Rhubarb! On it's own, I love the creative use of rhubarb as an ingredient, but overall this recipe sounds deliciously sweet, tangy and spicy all at the same time.

This rhubarb infused champagne sounds like a perfect sip on a summer day. Even if you aren't a fan of alcohol, you could add some of this Rhubarb Simple Syrup to sparkling water. In fact, I'm sure we could find a few delicious ways to enjoy rhubarb infused simple syrup and I am excited to try, but I may just start off with a glass of Rhubarb Champagne on the patio, because that just sounds fabulous.

Strawberry Rhubarb Crisp is one of those desserts that reminds me of home. I love making crisps and cobblers, because they are like deconstructed pies, with all the flavour but none of the hassle of getting the pie crust just right. The strawberries in this crisp sweeten up the dessert and make a perfect balance of flavours with the Rhubarb.

Strawberry Rhubarb Oatmeal is a perfect breakfast to make when you have an abundance of rhubarb  - it is sweet and tangy, simple to make, and Running on Real Food even provides instructions if you want to make it as overnight oats instead: perfect for busy weekdays! 


This is my recipe for Strawberry Rhubarb Scones (yes, you caught me... I am The Home Baked Vegan). I love this recipe because it is so versatile. I use this same scone recipe for any flavor of scone, just subbing out the fruit. It's pretty easy to make, and perfect for a treat with coffee or tea. I made a batch of these Strawberry Rhubarb Scones to gift to the woman who gave me all this rhubarb and I was so happy with how they turned out. 

I have heard great things about the Rhubarbarian's Vegan Rhubarb Pancakes... If you are a rhubarb lover, then these pancakes would be the perfect way to start off a Saturday morning. I can imagine a stack of Rhubarb Pancakes with a dollop of coconut whip, or maple syrup, either way, I can't wait to make these for my family this weekend.  


There is no denying it, the lattice top on this rhubarb cheesecake looks amazing, but don't let the beautiful design deter you from trying it yourself, once you find a rhythm, making a lattice pattern is actually pretty straight forward. This vegan cheesecake is no-bake, and the base of the cake is all made in a blender, making this rhubarb cheesecake a perfect summer treat - no need to preheat that oven!


This Rhubarb Crumble Cake is made with a simple cake base that is made in one-bowl, then topped with rhubarb and streusel. The sweetness of the cake and topping would balance out perfectly with the tartness of the rhubarb, and I can't wait to give this crumble cake a try! 


I couldn't make a list of rhubarb recipes without including a recipe for Strawberry Rhubarb Pie. My grandma used to make strawberry rhubarb pie with the rhubarb from my parent's garden, and it still is one of my favorite pies. Strawberry Rhubarb Pie is a timeless rhubarb recipe that everybody needs to try at least once. Delicious on it's own, or freshly baked with a dollop of your favorite vanilla ice-cream. 


I am really excited to try making this recipe. My husband loves Hot and Sour Soup, and I think the use of rhubarb here is really innovative. What a creative use of Rhubarb in a savory dish! Very Vegan Val uses rhubarb as the "sour" in this soup instead of vinegar which is what a traditional Chinese Hot and Sour Soup uses.
