These sugar cookies are made with beet juice, so they take on a pink colour and are perfect for Valentine’s Day. The beet juice is mostly for colouring, as the cookies taste just like your favourite, melt in your mouth sugar cookies should.
Here is the recipe for my vegan, Beet Juice Sugar Cookies:
1 Cup Sugar
1/2 Cup Margarine
1/4 Cup + 1 Tbsp Beet Juice
1/2 tsp Vanilla
2 Cups Flour
1 tsp Baking Soda
1 tsp Baking Powder
Preheat oven to 350’
In a large bowl, Cream together the margarine and sugar.
Stir in 1/4 Cup beet juice and the vanilla.
In a medium bowl, mix together flour, baking soda, and baking powder.
Mix the dry ingredients into the wet ingredients, until all of the flour is moist.
Press/roll the dough into 1” balls and brush with remaining beet juice.
Place on parchment lined baking sheet and bake at 350’ for 8-10 minutes, or until bottom of cookies start to turn golden brown.
