Christmas is my favourite time of the year, and each year, I start my Christmas baking off with Ginger Sugar Cookies.
I have been making variations of these cookies for years now, and they have always been my number one, go-to Christmas cookie. Here is the recipe I used for my Vegan Ginger Sugar Cookies this year:
Ginger Sugar Cookies
2 Cups Flour
1 tsp Baking Soda
1 tsp Cinnamon
1 tsp Ground Ginger
1/2 tsp Ground Cloves
1/4 tsp Salt
1 Tbsp Ground Flax mixed with 3 Tbsp Water
1/3 Cup Vegan Margarine
3/4 Cup Sugar
1/4 Cup Honey or Molasses
1/2 tsp Vanilla
1/4 Cup Raw Sugar
Preheat oven to 350’
In a medium bowl, mix together Flour, Baking Soda, Cinnamon, Cloves, Ginger, and Salt.
In a large bowl, Cream together margarine and sugar.
Mix in honey and vanilla to the margarine and sugar mixture.
Add dry ingredients to wet ingredients and mix.
Roll dough into 1” balls.
Roll each ball in raw sugar and place on a baking sheet.
Bake in the oven at 350’ for approximately 10 minutes.
Optional step: Dip in melted chocolate, then let chill to harden chocolate.
