Healthy Meal Idea: Chicken Quinoa & Salsa

Grilled Chicken
Brushed with lemon juice & olive oil.
Lightly seasoned with Salt and Pepper.
Grilled until cooked thoroughly

Cooked as per package instructions

Tomato Avocado Salsa
2 tomatoes - diced
1 avocado - diced
1 tbsp cilantro
Juice of 1 lime

If  there are any leftovers from this delicious dinner, cut up the chicken into bite-sized cubes. Mix chicken, salsa & quinoa together. Refrigerate, and enjoy a cold Quinoa Chicken Salad for lunch!

Today's workout was an extra challenge with my daughter providing me with some weight resistance... I did this workout three times with a 30 second break in between each set.

Healthy Meal Idea: Quinoa Bowl

I am a big fan of making simple and quick meals that are healthy. As a family of four, including a picky toddler, I am always experimenting with new recipes and this quinoa bowl was a big hit in our house, and as a bonus, it was both healthy and super easy to make! I prepped the black bean and corn mixture early in the day so it was ready to go, and made for one less thing to do at dinner time. 

Ingredients: Quinoa   Avocado  Black Beans  Corn  2 Tbsp Cilantro   2 tsp Lemon Juice   Salt & Pepper to taste  Egg 

Cook Quinoa as per instructions on package. 
In a medium bowl, mix together black beans, chilled steamed corn, 1 Tbsp chopped cilantro and lemon juice. 
Slice avocado. 
Cook egg to preference (example: over easy, or sunny side up). 
Place approximately 1 cup of cooked quinoa in bowl, top with 1/4 cup black bean & corn mixture, half a sliced avocado, egg and a sprinkle of fresh chopped cilantro. 
I loved today's 7 minute workout, and felt so great about it that I followed it up with "2 sit-ups in 2 minutes"!

Family Event

Finding time to workout with kids can be hard... I usually try to get a workout in during nap times, but that doesn't always work out. Today, it was a family event, with my two girls and my husband, we all did our workout together!
I love that my girls will grow up knowing the importance of exercise and taking care of their overall health. I love that working from home I am able to be here with them everyday to share my passion, and help introduce them to a healthy lifestyle.

7 Minute Workout

The weather warmed up for us today, so we enjoyed a nice walk outside with the family. Once we got home and got the girls down for a nap, I pushed out this 7 minute workout. Give it a try and let me know what you think! 

Chocolate Orange Protein Fiber Shake

In an effort to increase my fiber intake, I tried my hand at a new protein shake recipe after my workout today. If you love orange chocolate, you will love this one too!

Orange Fiberwise (1 scoop)
Chocolate Vitality Elevate Ultra Performance Protein (2 Scoops)
Cocoa Powder (1 tsp)
Honey (1 tsp)
Almond Milk (1 cup)

Blend together all ingredients and enjoy!

This tasty shake is perfect for an afternoon snack, or for after a workout and includes a whopping 13g of fiber and 31g of Protein!

Happy International Women's Day!

Today is a day to celebrate the achievements of women, worldwide. So take a moment today to acknowledge the amazing women in your lives! Big things are happening for women around the world, but even the smallest accomplishments should be acknowledged, as for some those mean the most. I know for me, my biggest accomplishments are two very small individuals, and they will grow up to be the strong women of the future & I know in my heart they will achieve great things!

No Excuses

As a mother of two young children, I know how easy it can be to say "I'm too busy, maybe tomorrow...", but if keeping our children occupied is our only excuse for not working out, we've got to up our excuse game (Currently on the list of valid excuses: "I'm running a fever and can't even care for my children, let alone myself" or "my child just got sick on me").  Children love to be involved in what we do as parents. My toddler loves to help me cook, always wants to wash dishes (aka: play with bubbles), and sweep the floor (let's hope this love for cleaning all lasts into adulthood!). That being said, why wouldn't she want to exercise with me as well?...
